The origin of capon dates back to Roman times. Legend has it that, in Ancient Rome, the consul Caio Cânio, deprived of sleep because of the roosters crowing at dawn, got the Senate to pass a law that forbade poultry within the city's urban perimeter. Deprived of the pleasure of cockerel meat, his subjects soon devised an ingenious way of getting around the law - castrating roosters. Thus the capon emerged, the tasty eunuch that, with its nobility and refinement, was soon compared to the pheasant, the partridge and the woodcock. Come and discover this flavour...
